These cookies bring back childhood memories. This is my Mom’s recipe from many years ago. When making those cookies it makes me feel like she is in the kitchen baking right along with me.

Ingredients

  • 1 cup unsalted butter, softened
    1 cup granulated sugar
    1 cup packed brown sugar
    2 large eggs
    2 teaspoons vanilla extract
    2 tablespoons molasses
    1 ½ cups all-purpose flour
    1 teaspoon baking soda
    1 teaspoon ground cinnamon
    ½ teaspoon salt
    3 cups old-fashioned oats
    1 ½ cups raisins

Directions

  • Preheat your oven to 350°f (175°c) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. stir in the vanilla extract and molasses.
  • In a separate bowl, whisk together the flour, baking soda, ground cinnamon, and salt. gradually add these dry ingredients to the wet mixture, mixing until just combined
  • Stir in the oats and raisins, ensuring they are evenly distributed throughout the dough.
  • Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. flatten each cookie slightly with the back of a spoon
  • Bake for 10-12 minutes or until golden brown around the edges. the centers of the cookies should still be slightly soft.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These oatmeal raisin cookies with molasses are perfect for enjoying with a glass of milk or a cup of tea. Enjoy the delicious combination of oats, sweet raisins, and the rich flavor from the molasses. Happy Baking!
