Mom’s Oatmeal Raisin Cookies

  • 1/4 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups old-fashioned oats
  • 1 -1 ½ cups raisins (soaked in boiling water for 15 min)Drain well and dry on paper towels
  • Preheat your oven to 350°f (175°c) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. stir in the vanilla extract and molasses.
  • In a separate bowl, whisk together the flour, baking soda, ground cinnamon, and salt. gradually add these dry ingredients to the wet mixture, mixing until just combined.
  • Stir in the oats and raisins, ensuring they are evenly distributed throughout the dough.
  • Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. They will spread out as they bake .
  • Let cookies set up on tray for 15 min before transfering to cooling racks with a spatula.
