Pineapple Mojito (Cocktail + Mocktail)

Ingredients
1/2 cup fresh pineapple chunks
8 fresh mint leaves
2 tsp sugar (or honey)
Juice of 1 lime
2 oz white rum
Club soda to top
Ice
Directions
- In a tall glass, muddle pineapple, mint, and sugar or(honey).
- Add lime juice, rum, and ice.
- Top with soda water; garnish with mint sprig + pineapple wedge.
- Mocktail Version
- Same as above, omit rum and add extra soda water or sparkling coconut water.
Notes
- BB’s Tip: I like swapping sugar for a little drizzle of honey whenever I can—it makes this Pineapple Mojito taste naturally sweet and just a little brighter. Juicy pineapple, fresh mint, and a squeeze of lime make it incredibly refreshing, perfect for a hot summer day on the deck or patio… just be ready, it’s so good you might end up a little sticky from all that tropical goodness while soaking up the sun!
