Ingredients

  • 1 cup long-grain rice (Jasmine or Basmati)

  • 1 can (14 oz) coconut milk

  • 1 cup water or chicken broth

  • 1 can (15 oz) red kidney beans, drained and rinsed

  • 2 sprigs fresh thyme (or ½ tsp dried)

  • 1 small onion, finely chopped

  • 1 tsp salt

  • 1/2 tsp black pepper

Directions

  • Heat 1 tbsp oil in saucepan; sauté onion and garlic until fragrant.
  • Stir in rice, coconut milk, water, thyme, salt, and pepper.
  • Bring to boil, reduce heat to low, cover, and simmer 15 minutes.
  • Stir in beans, cover again, cook another 5 minutes.
  • Fluff with fork and serve warm.
