Ingredients
For the Cake

  • 2 cups all-purpose flour

  • 3/4 cup sugar

  • 2 tsps baking powder

  • 1/2 tsp salt

  • 2 eggs

  • 3/4 cup milk

  • 1/2 cup melted butter

  • 1 tsp vanilla

  • 2 med apples, peeled and chopped fine

  • 1 tsp cinnamon

  • For the cinnamon topping
  • 1/3 cup brown sugar

  • 1 tsp cinnamon

  • 2 tlbs melted butter

  • 2 tlbs flour

Directions

  • Mix flour, sugar, baking powder, salt and cinnamon.
  • In another bowl, whisk eggs, milk, melted butter and vanilla.
  • Combine wet and dry ingredients just until mixed, then fold in the apples.
  • Spread into your prepared pan
  • Mix the topping ingredients and sprinkle evenly over the batter.
  • Bake approximately 35–40 minutes, until a toothpick inserted into the cake comes out clean.

Notes

  • BB’s Tip: Don’t be alarmed if the batter seems quite thick when you’re folding in the apples. That’s perfectly normal! Spread it evenly into your baking dish and let the oven work its magic. For an extra-special treat, serve the cake slightly warm with a scoop of good vanilla ice cream.
