“This fresh mango salsa is the perfect balance of sweet and zesty—juicy mango, crisp veggies, and a squeeze of lime come together in a vibrant mix that’s just as good with tortilla chips as it is spooned over grilled chicken or fish. Light, colorful, and full of flavor, it’s a summer favorite that tastes like sunshine in a bowl.”

Ingredients

  • 2 ripe mangoes, diced

  • 1 small red onion, finely chopped

  • 1/2 red bell pepper, diced

  • 1 small jalapeño, minced (optional, for heat)

  • Juice of 1 lime

  • 2 tbsp fresh cilantro, chopped fine

  • Pinch salt

Directions

  • Combine mango, onion, bell pepper, and jalapeño in a bowl.
  • Squeeze lime juice over top, sprinkle with cilantro and salt.
  • Toss gently and chill 15 minutes before serving.
  • Tip: Swap parsley for cilantro if you aren’t a fan of cilantro

Notes

  • Be sure to pick a mango that’s ripe but not too soft. If it’s slipped into that mushy, orangey stage, it won’t hold up in the salsa—you’ll end up with more of a puree than those fresh, juicy chunks we’re after.
